Tahini Banana Bread
Yields 12 slices
Ingredients
3 bananas
1 1/2 plant milk
1/2 dl olive oil
3/4 dl light tahini
3/4 dl maple syrup
4 dl spelt flour
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cardamom
1/2 tsp salt
For garnish (optional)
1 banana
Sesame seeds
How to
Pre heat the oven to 175°C.
Put 3 peeled bananas, plant milk, oil and tahini in a mixing bowl. Mix until chunky using an immersion blender - without mixing to much (we don’t want a completely smooth batter) since that will make the bread more compact. Add flour, baking powder, bicarbonate of soda, spices and salt. Fold together using a wooden spoon.
Line a baking tin with baking paper and pour in the batter. Slice 1 banana lengthwise and put on top, sprinkle with sesame seeds.
Bake the bread in the oven for 55 minutes. Take out from the baking tin and let cool on a cooling rack. Let it sit for 15 minutes before cutting in it.
